Meet our head cheff, May Walker.

“Born in Montego Bay, Jamaica, Rosie’s is the closest to home I’m going to get in Sydney. It’s Vibrant, Alive and Unique, and that is the essence of being Jamaican. Get up Stand Up!”

 May creates beautiful, flavoursome plates using fresh produce that’s crunchy, lively & colourful. We asked her a few questions about her favourite dishes & what inspires her and here’s what she shared with us.

What‘s your current favourite flavour?

“Sugar and spice and everything nice! I want it punchy and sweet all at the same time. A slap in the face with a hug at the end.”

Where did your love for cooking come from?

“My mother is an outstanding cook and from a young age I was exposed to different flavours and cuisines. She exercised her creativity in the kitchen and shared her talent it with me.

What inspires you most about cooking?

I’m definitely a feeder. I love creating experiences and dishes that make people light up when it arrives at the table.  I’m passionate about keeping the integrity behind the Ingredients I use in my dishes. Simple yet punchy.  I look forward to enhancing seasonal ingredients &  making everything a bit more sassy! Amen”
